In 2019 I made a red and green cake for Christmas! I used strawberry cake mix for the red sections and lemon cake mix for the green sections (with a few drops of food coloring, of course). Then I finished it with cream cheese frosting, dots of red and green sparkle gel around the edge, and loads of red and green sprinkles. [affiliate links]
Incidentally, Christmas Eve 2019 was the day I found out I was pregnant, so I was in a particularly good mood with even more reason to celebrate. Christmas 2020 my son was just under four months old, and I was exhausted and definitely not in the mood to make a pretty cake. BUT I did have cake mix and plenty of leftover sparkle gel and sprinkles from the previous year, so I made a simple strawberry sheet cake with lemon frosting. Strawberry lemon cake is one of my favorites, though I like it better with cream cheese frosting. Not exactly a “traditional” Christmas cake, but the colors work!
